The good news? It's a holiday. And, its gorgeous out.
The bad news? I still have to work. Meh. It could be worse, I guess. Happy Columbus Day! Let's celebrate!
Thankfully, my continued apple obsession did NOT miss it's objective...at least according to my tummy and my taste tester's tummy!-Yeah, that would be the hubster. Clearly, I can pay millions to have discriminating taste buds check out my recipes :-) Check it out:
Apple Do-duns
What you need for success:
1/4 cup flour
1/4 cup oats
1 egg white
1/2 tsp. baking powder
dash of cinnamon, salt, nutmeg (or apple pie spice)
1 tsp. canola oil
1 small apple
2 tbsp. milk
Splash of caramel syrup (optional)
Mix together dry ingredients. Add in egg, oil and milk. Stir well. Whirl the apple through a chopper/food processor/blender until very fine. Mix into dough. Let dough set for 5 minutes. Spray a mini donut pan (if you don't have a pan for donuts, a mini muffin pan would work as well).
Bake at 325 for 10-12 or until set. Let cool for 10 minutes, then pop out of the pan. Makes 12 mini donuts.
The best part of this recipe? If you are calorie counting, the whole things adds up to be about 450 calories. Split down the middle with the hubster = a wonderful evening treat. (Or, as the hubster calls them...DO-DUNS-yeah, you knew that was coming). I think I could work on the browning aspect, but my taste buds didn't complain!

Hi. I just discovered your blog via meals and miles. I live on upstate NY ( Syracuse) so I am familiar with training in the cold and snow. Congrats on your ironman finishes. Wow what an accomplishment. I have been a runner all my life and am relatively new to triathlons. 2 irongirls, relay of syracuse HIM this year and relay for Delta lake. Still on the fence about moving up to the longer distance but agree that a good foundation in the Olympic distance is a start.
