....doing your run in capri tights and only 2 layers.
....deciding to "go slow" and still managing under a 9 minute pace for 7 hilly miles (not bad for running only once a week since October :-P).
...making snacks and dinner for the "big game" for the hubster and his guys....but feeling completely okay with not having to entertain so I can read my latest book. (AMAZING. And I'm not a King fan!)
...starting out the day right. With tropical "Paradise" Oats.
Tropical Oats
1/2 cup old fashioned oats
pinch salt
1/2 cup almond milk
1 cup water
1/2 cup pineapple (fresh or canned, strained)
pinch salt
1 tsp. vanilla
1 tbsp. coconut
1 tbsp. macadamia nuts
Combine oats, water and salt in a small pot. Simmer on the stove top for 10 minutes, add in vanilla and almond milk. Stir in pineapple. Turn to low for 5 minute, or until heated through. Bowl it. Sprinkle on nuts and coconut. Picture sandy beaches, ocean waves, and vacation. Enjoy.
Ahhh, Sunday, do I love you! Now, Eli, if you could just pull it together so I don't have to run 20 miles tomorrow, that would be great. Thankyouverymuch :-D
