Flash in the Pan

Good Evening, friends!  I hope life is treating you well on this sunny, brisk Thursday.  It's been a whole lotta running around in my world-but at the same time, I have no clue what I've actually been doing-anyone else ever feel like that?  I know I've been working lots...(and what a mess that one s-we finally hired someone new today, and I cannot WAIT for her to start!)....and I've had a few personal things going on....coupled with Christmas stuff and housework, hanging out with friends and working out....I'm pretty busy!  But....hey...that's just life.  It's nothing special.  Ever notice how we seem to fill those hours with something no matter how much or low little is on our plate?
And speaking of plates, I think it's high time for another recipe.  A wonderfully warm and comforting side dish recipe that highlights my German heritage and is delish on cold winter days.
Yes, it has cabbage.
No nose wrinkling :-p-it's pretty cabbage!

Purple Cabbage Salad

One head Purple Cabbage, diced into thin ribbons
2 large Macintosh Apples, diced
1 onion, diced
1 tsp. garlic, minced
2 tbsp Red wine vinegar
1 tsp. sugar
1 tsp. cloves
pinch of black pepper

This is one of those awesome throw it together quickly dishes for a week night.  Take out a big sauce pan and fill it with about a half inch of water.  Add in the cabbage and onion, cook down for about 10 minutes, covered.  Uncover and add in the apples, garlic, vinegar, sugar, cloves, and pepper.  DO NOT STIR.  Cover and cook on low for 15 minutes.  Uncover, stir, and continue to cook on low until cabbage is soft (about 5 more minutes). 

Serves 4-6 as a side dish, though I've been known to pair it with some turkey sausage and call it dinner.  Sounds weird, looks pretty, and tastes delicious (even better the next day!!)  And....it's the only way I know to use purple cabbage.  Have you ever had purple cabbage in another type of recipe?  I would love to hear about it!
